Kesar – Dry Fruit Roll

Directions
Dry Fruit stuffing preparation:
- In a Kadai, start roasting Almonds/Badam, cashew/Kaju, and pistachio/pista on a low flame for a minute. After a minute, switch off the flame and let it cool down.
- Once completely cooled, transfer to a mixer grinder and grind to a fine powder.
- Transfer to a mixing bowl.
- Add sugar, cardamom/Elachi powder, and milk to the ground mixture & mix the ingredients together.
- To a Kadai, add the mixture and cook on a medium flame for 2 mins.
- Add Raisins/Kismis and mix together.
- After two mins, the mixture will be thickened. Transfer the mixture to a plate & let it cool down.
- Once cooled, grease your hands and knead the mixture well.
- Dry fruit stuffing will be ready and keep aside.
Preparing Kesar dough:
- Soak Saffron strands in lukewarm milk for about 10 mins.
- In a Kadai, add ghee, milk and mix well.
- Add milk powder to the milk mixture and mix together.
- Once it is combined, add the Kesar milk & mix well.
- Add powdered sugar to the mixture and mix quickly to avoid lumps.
- Keep stirring continuously for 5 mins.
- The mixture will gradually get solidified and will leave the pan.
- To check whether the dough is formed, take a pinch of dough and shape it into a ball, if the ball holds shape, then the consistency is right. If not, keep stirring for few more mins.
- When Kesar dough is formed, transfer it to a plate, and let it cool down.
Preparing Kesar-dry fruit roll:
- Once Kesar dough is cooled, gently wrap the Kesar dough by stuffing the dry fruits mixture.
- Using a knife cut the long Kesar roll and shape it into a cylindrical Kesar roll.
- Yummy Kesar rolls are ready!!!
