Ammini Kozhukattai

Ammini Kozhukkatai is one of the lip-smacking dishes and got its origin from the south of India. Ammini Kozhukattai is one of the tastiest and lightest tiffin recipes. You cannot find this recipe at any restaurant. This recipe is made by preparing rice dough and later shaping it into tiny balls, and then steamed and tossed with spices and coconut which enhances its flavour. I got to know about this recipe from my mother.

Ingredients

  • Rice Flour – 1 Cup
  • Coconut – ½ Cup
  • Mustard - 1 tsp
  • Urad Dal - 1 tsp
  • Chana Dal - 1 tsp
  • Red Chillies – 2
  • Asafoetida/Kayam/Hing – 1/4 tsp
  • Salt – per taste
  • Sugar – ½ tsp
  • Oil – 3 tsp
  • Water – 2 Cups
  • Curry leaves


Directions

Preparing rice dough:

  • In a pan add water, salt and oil. Let it start boiling.
  • Once boiled, add rice flour, mix it evenly & quickly without forming lumps.
  • After few minutes, all liquid will be absorbed and flour will be well combined into a dough. Keep mixing until the dough separates from the pan. If the rice dough is properly cooked, the balls will be non-sticky.
  • Switch off the flame.
  • Transfer the dough to a plate and knead again for a minute. Kneading the rice dough to ensure there are no lumps.

Preparing & Steaming Rice balls: 

  • Take a pinch of dough & start shaping it into tiny balls.
  • Prepare the balls and keep it aside.
  • Grease the idli or steamer plates and carefully place the prepared balls to the greased plates.
  • Preheat the idli pot and carefully place the plates inside the pot and steam for 10 mins.
  • After 10 mins, check whether the balls are completely cooked and keep it aside. Fully cooked balls change to half white colour. 

Tempering Rice balls:

  • In a Kadai, add oil and start adding spices such as mustard, Urad dal and Chana dal. Let it splutter.
  • Add Asafoetida, Red chillies & Curry leaves and sautés well.
  • Now add coconuts and salt. Mix it well. The coconut mixture is ready.
  • Now add the cooked balls to the coconut mixture and mix it till the balls are evenly coated.
  • Add sugar to enhance its flavour.
  • Yummy Kozhukattai is ready. Serve immediately.
