Navaratna Pulao - Navaratan Pulao

Pulao is a common recipe in Indian households. Among these, Navaratna Pulao/ Navaratan Pulao is one of the quickest, easiest and aromatic dishes. Navaratna in Sanskrit refers to nine jewels and here for this Navaratna pulao recipe, we use 9 different vegetables & dry fruits.

Ingredients

  • Potato (diced) – 1/2 Cup
  • Onion – 1
  • Carrot – 1/4 Cup
  • Green Peas – 1/4 Cup
  • Cauliflower - 1/4 Cup
  • Beans - 1/4 Cup
  • Cashews (Chopped) – 1 tbsp.
  • Almonds (Chopped) – 1 tbsp.
  • Raisins – 1/2 tbsp.
  • Milk – 1 tbsp.
  • Saffron – 10-15 strands
  • Rice (Basmati / Sona Masuri) (Cooked) – 2 Cups.
  • Butter – 2 tbsp.
  • Black Cardamom – 1
  • Cloves – 3
  • Cinnamon – 1 piece
  • Pepper – 1 tsp
  • Ginger Garlic paste – 1 tsp
  • Cumin – 1 tsp
  • Salt – Per your taste 

Directions

  • Cook Basmati / Sona Masuri Rice & keep aside.
  • In a small bowl mix milk and Kesar strands together. Keep it aside for about 20 mins.
  • In a Kadai, add butter and roast dry fruits such as almonds/badam, cashew/Kaju, and raisins/kismis on low flame for about 2 mins.
  • Once roasted, transfer it to a bowl and keep it aside.
  • To the same Kadai, add potatoes and fry until golden brown.
  • Once fried, transfer to a bowl and keep aside.
  • To the same Kadai, start adding spices such as Black Cardamom, Cloves, Cinnamon, and Pepper. Sauté for half a minute.
  • Add ginger-garlic paste and sauté till the flavour turns aromatic.
  • Add onions & fry until translucent.
  • After frying onions start adding vegetables such as Carrot, Green Peas, Cauliflower, and Beans to the kadai.
  • Cover & cook on a medium flame for about 5-6 mins. You can add little water before covering it with a lid to avoid burning the dish.
  • After 6 mins, Check whether vegetables are completely cooked. If not, keep cooking until it’s fully cooked.
  • Now add the cooked rice & mix gently without breaking the rice.
  • Add salt, saffron milk, fried potatoes, and roasted dry fruits and mix gently & evenly. Switch off the flame.
  • Delicious Navaratna Pulao/ Navaratan Pulao is ready. Serve with raita.
