Upma Kozhukattai

Upma Kozhukattai is one of the traditional recipes of the South of India. You cannot find this recipe at most of the restaurant. This recipe is made by preparing, shaping, and steaming rice upma into oblong dumplings. I got to know about this recipe from my mother.

Directions

Preparing Rice Upma

  • To a mixer grinder, add raw rice and grind it to a coarse powder.
  • In a Kadai, add oil, mustard seeds, Urad dal, Chana dal. Let it splutter.
  • Add herbs & spices such as curry leaves and coriander leaves, green chillies, ginger and Sauté well.
  • Then add coconut, water, Asafoetida, and salt. Mix well.
  • Now start adding coarsely ground rice to the Kadai & give a quick mix to avoid lumps.
  • After few minutes, water will be completely absorbed.
  • To check whether the consistency is right, take a pinch of rice upma and try shaping it into balls. If the balls hold shape & do not stick to the hands, then the consistency is right.

Preparing and steaming dumplings

  • Take a lemon-sized portion of upma & make it into oblong-shaped dumplings/Kozhukattai. Transfer it to a plate and keep it aside.
  •  Stuff a pinch of Jaggery to few Kozhukattai for enhancing the taste to sweet and spicier.
  • Grease the idli or steamer plates and carefully place the prepared Kozhukattai on the greased plates.
  • Preheat the idli pot and carefully place the plates inside the pot and steam for 8-10 mins.
  • After 10 mins, check whether the Kozhukattai is completely cooked, if not steam for few more minutes.
  • Delicious upma Kozhukattai is ready!!!! Serve with chutney.
